Rainbow Cupcakes

Cupcakes: Makes 18
4oz self raising flour, sugar and butter, 2 eggs
Butter icing: 4oz butter, 8oz icing sugar
Mini marshmallows
Fizzy rainbow esque sweets
So I'd seen these cakes a few times before and a friend actually pointed them out to me months ago saying I should make some. There's lots of different variations but I went for the easiest!
You start by making the cake mixture - cream the sugar and butter together, add the eggs and sift in the flour folding the mixture. Then bake in the oven for around 20 mins are until risen and lightly browned. Leave to cool. Cream the butter and icing sugar, add blue food colouring and pipe onto cooled cakes. Add the marshmallows and rainbows as you please :) and voila!
Word of warning though, maybe only make enough that will get eaten as the marshmallows and sweets go soft and soggy after a day or so. As did the cookies in the cookie monster cakes I made a few weeks ago! :(
In other news the Motel event last night was amazing! Was so lovely to see lots of other bloggers, a few of whom I'd met before. Had a great day wandering around London with Becca, Michelle and Lyzi too :) Will post about the evenings events soon!
