Prawn Noodle Stir Fry

This prawn noodle stir fry recipe came together by chance. We had all of the ingredients in our fridge and found the perfect recipe online, to bring them all together. The recipe was originally posted by Emily at Fuss Free Cooking, and it’s most certainly that! I’m not one for complicated recipes, and stir fry’s are often my go to, especially when cooking for one.
This recipe brings together a variety of vegetables and spices, creating a really colourful dish packed full of flavour!

Ingredients (serves 2)
½ tbsp miso paste
2 tbsps tomato puree
4 tbsps water
1 tsp sugar
Cooking oil
200g mangetout, trimmed and washed
200g baby corn
1 long red chilli, deseeded and roughly chopped
1 red pepper, deseeded and roughly chopped
2 spring onion, sliced
400g prawns
1 pack of fresh noodles
Drops of sesame oil


1. In a small bowl, whisk miso paste, tomato paste, a teaspoon of sugar and 4 tablespoons of water until well combined with a fork. Set aside.
2. In a large stir fry pan, add cooking oil. When the oil is hot, add the mangetout with a pinch of salt. Saute until they turned bright green, slightly soft but with a bit of crunch. Transfer to a plate and keep warm.
3. In the same pan, add ¾ of the chopped chilli (leave some for garnish later) and the WHITE SECTION of the sliced spring onions (leave the green part for garnish later). Add more cooking oil if necessary. Add the baby corn and red pepper.
4. Follow the instructions on the pack of noodles. Fresh noodles normally say to add to stir fry and cook for a couple of minutes.
5. When the chilli and spring onion becomes aromatic, add shrimps. Saute until they just turn opaque.
Add the miso-tomato mixture to the shrimps and cook until the sauce is heated through.
6. Check for seasonings and add soy sauce if needed.
Add a couple of drops of sesame oil before removing the stir fry from the heat.
Serve immediately with the remaining chopped chilli and spring onions.
