Mussels in a spicy tomato sauce

It’s the Christmas holidays, but if like me you’re sick to death of turkey and all the trimmings, you want a hearty, warm dinner, but are lacking motivation and inspiration – this could be the dish for you! Mussels are super easy to cook, and relatively cheap to buy. I’m a big seafood fan and mussels are one of my favourite things to eat. We normally buy them in their shells, vacuum packed in a garlic or white wine sauce (M&S do some really tasty ones for only Β£4 a box). However this time we only had our Sainsbury’s local to choose from, so we bought mussel meat and made our own sauce.

Ingredients (serves 2)

 

150-200g pack of cooked mussel meat
1 tin chopped tomatoes
1 chilli, finely chopped
1 onion, diced
1 clove of garlic, smashed
A few basil leaves, roughly chopped
100g spaghetti
Salt and pepper, to season
1. Begin by add your spaghetti to a pan of boiling water. Bring to the boil and then simmer for 8-10 minutes (following the packs instructions).
2. Whilst your spaghetti is simmering, fry the onion on a medium heat, until it starts to turn brown. Then add the chill and garlic.
3. Stir through a tin of chopped tomatoes, add salt, black pepper, and most of the basil (leave a little to garnish). Simmer for 4-5 minutes.
4. Stir through the mussels and drain the spaghetti. Serve the spaghetti in a large bowl, and spoon the tomato mussels on top. As the mussels are already cooked they do not need to be in the pan for long – just enough time to heat through.
5. Garnish with more salt and pepper, and a few flakes of basil.
