Sweet Monday recipes, spiced root vegetable soup

Part 5 of my 6 day vegetable challenge with is today’s post. And this week we have a spcicy vegetable soup! I can’t believe next week’s will be the last in the series! It’s certainly opened my eyes more to vegetarian recipes, how easy they ca be to create, and how amazing they can taste!

This spiced carrot and lentil soup is no exception. Packed full of flavour, this soup is great to keep you warm on these chilly Autumn days. Whether it be for lunch or dinner, enjoy with some equally as tasty bread!

Ingredients (serves 2)
1 onion, finely chopped
1 sweet potato, chopped
1 carrot, chopped
1 parsnip, chopped
1 red chilli, roughly chopped
40g dried green lentils
70ml vegetable stock
50g crème fraiche to garnish
1 tbsp olive oil
210ml milk
Half a tbsp ground cumin to taste

1. Heat the olive oil in a large pan. Add the onions and fry for 5 mins until softened. Tip in the vegetable stock and cook for another 5 mins, adding the chilli and cumin (if desired) for final 2 mins.
2. Add the lentils and stock to the pan. Bring to the boil, then lower heat and simmer for 25 mins until veg are tender and lentils are soft.
3. Blitz until smooth with the milk and a little extra water or stock, if necessary.

4. Ladle into bowls and serve with a dollop of crème fraiche and a sprinkle of chopped coriander.
