Recipe | Broccoli Pasta Bake



Serves 2
140g pasta, 140g broccoli cut into florets, 12g butter, 150ml milk, 12g plain flour, 120g cheddar cheese grated and some nachos.

This dish combines two of my favourite things – pasta bake and broccoli cheese! Since a young age I never liked cauliflower cheese because I couldn’t stand cauliflower so my Mum would always make me broccoli cheese to go with my roast dinner.
This dish is super easy to make and doesn’t involve cooking the pasta in the over for 30 minutes like other pasta bakes! I stole the recipe from the bbc website. Mine looks a little shallow in the roasting dish because I cooked it for two people rather than the recommended 4 on every site I seem to find. So I simply halved the ingredients πŸ™‚
To begin with you need to boil some water, add the pasta and simmer for 10-12 minutes. Near the end of the pasta add your broccoli and simmer that for around 4 minutes. Drain well and then heat the grill to around 180/200 degrees.
Meanwhile heat the butter in a saucepan until melted and then stir in the flour. Keep stirring and add in the milk slowly. Try to get out all the lumps, I used a whisk to make it easier. Bring to the boil and then simmer for 2 minutes and add in half of the cheese.
Mix the pasta and broccoli into the cheesy mixture and pour into a dish. Add the nachos and the rest of the grated cheese over the top. Place under the grill for around 4 minutes until lightly golden brown.
