Recipe | Chocolate & Strawberry Muffins

To make 16 cupcakes/small muffins
2oz creamed coconut (melted into 11oz boiling water)
1oz cocoa powder
7oz self raising flour
Half a tsp of baking powder
Pinch of salt
4oz soft brown sugar
100ml sunflower oil

This makes some really yummy vegan muffins! My friend found the recipe and they taste so good. I made mine smaller in cupcake cases but you could make larger muffins it would just make less of them.
First of all melt all of the creamed coconut into the boiling water. Whilst this is melting you can mix the cocoa powder, self raising flour, sugar, baking powder and salt together. Pre heat the over to 180 degrees. Gently pour in the sunflower oil followed by the melted creamed coconut. Mix this all together until you have a smooth, runny mixture (you might need a whisk). Pour into cupcake cases and bake for 1 hour!
It sounds like a long time but they come out soft and delicious. 
I used a spatula and added chocolate Philadelphia to the top instead of icing but you could just as easily use chocolate icing (cocoa powder, icing sugar and butter). And then top with half a strawberry!
