I thought this would be quite dry and would need some kind of cream or stock, but actually it wasn’t at all once you mixed it all together. I didn’t make the pesto myself, but the jar I bought added a lovely creamy texture throughout the dish. I added two handfuls of pine nuts to serve which gave the dish a wonderful crunch, and pine nuts are literally the best thing ever – they’re expensive but so worth it!
I served mine with salad but you don’t have to. You could also add chicken or prawns to mix it up!
Ingredients (serves 2)
1 head of broccoli,
2 tbsp pesto,
2 handfuls of pine nuts,
Salad and pine nuts to serve
1. Boil a pan of water and simmer pasta for 10-12 minutes.
2. Chop broccoli into smaller florets and boil for around 5 minutes.
3. Drain broccoli and pasta, and then add the broccoli to the pasta. Add two tablespoons of pesto and mix together.
