Feta couscous salad

Ingredients:
Feta, spinach, half a pomegranate, cucumber, tomato, 2 boiled eggs, couscous, salt, pepper and olive oil.

This is probably the tastiest salad I’ve ever made at home before… with the help of Stew of course. It’s great that we’re both into eating healthy and making our own food. It definitely helps to have someone to cook with when you’re not brilliant at cooking yourself. It also makes it a lot more fun and enjoyable to eat afterwards.
The idea behind the salad came from buying a pomegranate when doing our weekly food shop as they were on offer. We both love pomegranate but have never thought to buy one as we would never know what to do with. Being an avid fan of Jamie Oliver I remember him using pomegranate in salads quite often, simply cutting one in half and hitting the back of it with a wooden spoon with his hand under the underside so that the seeds sprinkled out through his fingers.
So we quickly looked on Google and found a couscous salad with pomegranate which I had a box of in the cupboard, and decided to make up our own recipe. Couscous is super cheap to buy and easy to make! Don’t ever buy a pre-made couscous salad, they’re such a rip off!! I remember paying less than £1 at home for a decent sized bag of couscous and it goes a long way. We poured around a third of a bag into a bowl and topped up with boiling water so that it just covered the couscous. Leave for a couple of minutes so that is soaks all of the water up and then fluff up with a fork. And you’re done! Couscous is quite bland though so it’s great to season it with salt and pepper, herbs or spices.
