4 pieces of bread, a punnet of cherry tomatoes, a handful of spinach, 2 spoonfuls of cottage cheese and a drizzle of balsamic vinegar.
The other day for breakfast Stew and I rustled up this very tasty tomato, spinach and cheese bruschetta. It was so easy to do and really tasty. We simply grilled the bread on both sides to lightly toast it. At the same time we heated a pan with a little oil to gently heat the tomatoes. You literally only need to cook them for 3-4 minutes and just before the end and the spinach so it wilts a little. Pour your mixture onto your toasted bread, drizzle with balsamic vinegar and if you want you can add some cheese. We used cottage cheese as it was what we had in the fridge, however feta would work amazingly too.

I’m sorry I haven’t blogged a lot about Melbourne so far. I have been exploring but I keep forgetting to take my camera out with me, bad blogger!! I have also been busy trying to find a job and living in limbo. But I promise I will soon be back to blogging normally 🙂
