Roasted Vegetable Couscous


Couscous, a range of vegetables, salad to serve.

This is so simple and tasty!

All you need to do is chop up some vegetables, we chose pepper, green beans, tomatoes, shallots, garlic and added tofu. Roast these in an oiled roasting dish for around 30 minutes at 180 degrees or until lightly browned. 
Remove from the oven. Pour couscous into a bowl and add boiling water until it has just filled over the top of the couscous. Leave for 2 minutes until all the water has been absorbed and lightly fluff up with a fork. Add the couscous to the roasting dish, mix with a fork and serve.

  4. I have made this before and I added a little Harissa paste through the couscous when stirring in the veg and it gave it a gorgeous flavour! x
